Baked Salmon and Cauliflower

Salmon cooked with cream sauce is delicious and can be a little oily. Combining it with the slightly bitter cauliflower is perfect. You can add other vegetables like carrots, cabbage, leeks or squash.

Ingredients (serves 2)

2 fillets of salmon, remove the skin and dice into smallish pieces
I large onion roughly chopped
Small pot of double cream
Tablespoon of capers, chopped in half
A small cauliflower
Quarter of a large savoy cabbage (or 2 leeks or 2 carrots) finely chopped
Tin of chopped tomatoes
Large handful of grated cheddar

Method

Remove the florets from the cauliflower and chop so they are bite sized but we are not making cauliflower mash.

Saute the onion in a pan for five minutes then add the other vegetables (not cauliflower and cook gently for another 5 minutes. Add the tomatoes (just to heat them) and tip them into a casserole dish. Add in the rest of the ingredients, and mix well.

Place into an oven set to 160C and cook for 30 minutes.

The cauliflower should be cooked but not mushy.
